Cretan Spinach Salad

Nothing compliments a meal like a fresh salad. The Cretan Spinach Salad from the menu at Olympia Grill, one of the best places to eat in Galveston, is easy to make and can be prepared ahead of time for a quick addition to any meal.

 

INGREDIENTS: 

 

1 pound of spinach

 ½ cup of Feta cheese, crumbled

 

½ cup chopped parsley

 

3 tablespoons lemon juice

 

1/3 cup olive oil (Cretan if you can find it)


Any good recipe starts with clean, quality ingredients and at the Olympia Grill we we always strive to put the best on your table. When preparing their recipes at home take the same care, both with your ingredient selection and preparation. Be sure to wash your spinach several times and dry before starting your salad.

Once you have all your ingredients assembled, put your spinach in the salad bowl and toss with the crumbled Feta cheese. Store this spinach and Feta mixture in the refrigerator to keep crisp until serving.

Next, you will make your dressing. Combine the olive oil, lemon juice, salt, pepper and garlic, beating until creamy. Once you have beaten your dressing to a nice consistency, you can store the dressing in the refrigerator as well to chill until serving.

When you are ready to serve, drizzle the creamy dressing over your spinach and Feta salad and toss until well coated. Add a sprinkle of parsley over the top and you are ready to serve. Family and friends are sure to be impressed by the bright citrus flavors of this salad!

For an added gourmet touch, you can cube and toast whole wheat or whole grain bread to make your own croutons.

This recipe makes 4 to 6 servings.
